Wyeast Weihenstephan Weizen(TM) Liquid Yeast produces a balance of banana esters and clove phenolics. Sulfur is commonly produced but will dissipate with conditioning. Spicy and estery and very authentic. This classic strain of yeast is perfect for Dunkelweizen, Fruit Beer, German Hefeweizen, Roggenbier (German Rye Beer), Weizen/Weissbier, and Weizenbock.
Because this strain is very powdery you will notice it remains in suspension for an extended amount of time following attenuation. This is true top-cropping yeast and requires fermenter headspace of 33%.
