A great yeast for Kolsch and Alt style beers.
White Labs - German Kolsch is a strain of yeast from a small brewpub in Cologne, Germany. It is used for Kolsch and Alt style beers, but can also be used for light beers like blond ale and american wheat. It produces a slight sulfur during fermentation that disappears with age and leaves you with a clean, lager-like ale. If you ferment this yeast at a cooler temp (ie., in the high fifties) the yeast will produce less esters, giving you a really clean kolsch. Using this method requires making a yeast starter to ensure a vigorous ferment. Ferment for 10-14 days in the primary.
