A great yeast. A fast and vigorous ferment and a nice clean beer at the end.
White Labs - Dry English Ale is similar to WLP002 in flavor profile; it is highly flocculent, but it is 10% more attenuative. There is no residual sweetness, which makes it well suited for high gravity ales. It reaches terminal gravity quickly. 80% attenuation can be reached even with 10% ABV beers.
We recommend boosting the performance of this yeast by following a nutrient schedule. This schedule will optimize the conditions for exposure of the yeast to high alcohols. Add Servomyces to the kettle at the end of the boil. Then halfway through the fermentation add 6 grams per 5 gallons addition of Fermaid K.
Optimum Fermentation Temp: 65-70.
