Soft sugar is a by-product of the rock candi and candi syrup making processes. It consists of tiny crystals of beet sugar that were removed from the syrup by way of a centrifuge. These crystals have a more intense flavor than the standard candi sugar rocks American brewers are used to seeing. Soft Belgian Candi Sugar can be used as a direct replacement for syrup or rocks.
