German Cascade is similar in flavor and aroma to the US version. In a study done comparing German grown and US grown Cascade, the German Cascade was found to have higher levels of polyphenols and esters, whereas the US Cascade had higher levels of linalool. This means that the US version is more citrussy and fruity and the German version demonstrates more typical "hoppy" flavors that were determined to be more harmonious. A less intense bitterness was perceived from the German grown crop.
