MT Dry Wine Yeast is a great yeast for any red wine, but is particularly well-suited for Merlot and Cabernet Sauvignon. It was selected in Saint Emilion by the ITV Bordeaux and Martin Vialatte Oenologie, in collaboration with the INRA Montpellier, for its ability to enhance varietal fruit and floral aromas, along with strawberry jam, caramel, and spice notes. This yeast will impart that "soft, fresh bowl of berries" element that works well alone or in a blend. Wines made with MT show good colour stability along with enhanced tannic structure and rich mouthfeel, making it ideal for long-term aging. This yeast will perform best with a balanced nutrient strategy. Best results from 59 to 90 degrees F, with an alcohol tolerance to 15%.
