This malt goes through Briess' proprietary multi-step mash program. Then the liquid is gently evaporated from the wort to preserve the full, rich flavor and minimize color development. This leaves a concentrated powder with phenomenal flavor and character. The mash multi-step program leaves high Free Amino Nitrogen (FAN) to ensure good yeast health and a high degree of fermentability.
