Caramel and crystal malts are used as an adjunct to add sweetness, flavor, and color to beer. The malts range from light malts, which add body and aid in head retention; to medium malts, which add some color and sweet caramel flavors; to very dark malts, which add significant color, with caramel, nutty, and slightly bitter flavors.
