Overflow Tube

An overflow is a simple system to deal with an active fermentation. If you see foam, called Krausen, entering your airlock, you should set up an overflow on your fermenter. Having an active fermentation is a good thing. So when you see foam in your air lock don't panic, just follow these directions. An overflow is important because an airlock can easily get plugged with yeast from the krausen, which will allow pressure to build in your fermenter. The mess that you have to clean up after your fermenter pops is not fun.

If you are using a glass carboy, the easiest overflow is made with 3-4 feet of 1'' inside diameter plastic hose. You can also insert siphon hose into the hole in a rubber stopper. If you ferment in a plastic bucket, you can insert your 5/8'' siphon hose into the black grommet in the lid. This is a tight fit, so you might want to warm the hose first. After you get your blow-off hose attached to your fermenter, you need to place the other end in a container of sanitizer. Be sure to choose a container that has plenty of head-space to contain any foam that is pushed out. Don't fill the sanitizer more that 1-2'' deep.

Always sanitize the tubing to be used for an overflow. Never push the tubing more than 1/2'' into your fermentor. Be sure to clean your tubing as soon as possible because it will get dirty.
